These almond butter cookies are so simple to make they are almost too good to be true!

Using just a few ingredients and a quick bake, you are left with guilt free low carb cookies.

Perfectly sweet, soft and chewy, these keto friendly cookies will no doubt become a household favorite and are great to make with kids.

Ingredients

  • 1 cup almond butter
  • â…“ cup xylitol sweetener
  • 1 medium egg
  • ½ teaspoon baking soda
  • 1 ½ teaspoon spices cinnamon ground
  • â…“ cup, halves pecans
  • 0.2 teaspoon salt

Instructions

  1. Preheat the oven to 340 degrees Fahrenheit and line a shallow oven tray with baking paper.
  2. Add the almond butter, egg, xylitol, cinnamon, baking soda and salt to a large mixing bowl.
  3. Beat well to combine, forming a smooth cookie batter.
  4. Add the pecans to the bowl and stir them evenly throughout the dough.
  5. Using your hands, divide the mixture into 12 even balls and arrange on the lined baking tray. Press the dough down to form thick cookies, leaving about an inch between each cookie (they will spread when baking).
  6. Place the tray in the center of the oven to bake for 10-12 minutes, until golden brown.
  7. Allow the cookies to cool completely and firm up before serving.
