These simple cucumber bites are topped with an avocado pesto, rich with fresh basil, aromatic garlic and crunchy pine nuts.
These make a great snack between meals rich in healthy fats.
Ingredients
- 2 tablespoon olive oil
- 1 each avocado
- 1 clove garlic
- 1 tablespoon, whole pieces pine nuts
- ½ tablespoon lemon juice
- ⅓ cup, whole pieces basil, fresh
- ⅓ large – 8 1/4" long cucumber
- ¼ teaspoon salt, sea salt
Instructions
- Peel and roughly chop the avocado flesh and add to a food processor along with the lemon juice, basil, garlic, pine nuts and salt. Blend to combine.
- Add the olive oil and blend again until you have a semi smooth but thick paste.
- Slice the cucumber into 12 even discs.
- Divide the avocado pesto evenly between the 12 discs to serve.
