These simple cucumber bites are topped with an avocado pesto, rich with fresh basil, aromatic garlic and crunchy pine nuts.

These make a great snack between meals rich in healthy fats.

Ingredients

  • 2 tablespoon olive oil
  • 1 each avocado
  • 1 clove garlic
  • 1 tablespoon, whole pieces pine nuts
  • ½ tablespoon lemon juice
  • ⅓ cup, whole pieces basil, fresh
  • ⅓ large – 8 1/4" long cucumber
  • ¼ teaspoon salt, sea salt

Instructions

  1. Peel and roughly chop the avocado flesh and add to a food processor along with the lemon juice, basil, garlic, pine nuts and salt. Blend to combine.
  2. Add the olive oil and blend again until you have a semi smooth but thick paste.
  3. Slice the cucumber into 12 even discs.
  4. Divide the avocado pesto evenly between the 12 discs to serve.
