These soft and doughy Keto bagels are loaded with fats and flavor from cheese and crispy bacon. The bagels are prepared with a cheesy fathead dough before being oven baked until golden. These make a great guilt free bread substitute.

Keto Bagel Ingredients

The bagel dough is made from a combination of oozy cheddar, cream cheese, ground almonds, coconut flour and ground flaxseed. Crispy chopped bacon and tender pan-fried onions are then folded into the dough. A little low carb sweetener is added to the dough recipe. This can be omitted entirely if desired, or you can swap for your preference in low carb sweetener.

These Keto bagels are a great guilt free way to enjoy bread again. These make an excellent brunch option filled with smoked salmon and cucumber. Alternatively, these make a great lunch with a lettuce, cheese and tomato filling.

Ingredients

  • 3 slice – 6" long bacon
  • 3 tablespoon olive oil
  • 1 teaspoon baking soda
  • 1 teaspoon 100% pure erythritol by now
  • 1 large raw egg
  • 1 tablespoon cream cheese spread
  • 1 teaspoon onion powder
  • 1 cup, grated cheddar cheese
  • ½ cup, ground almonds, raw
  • ½ cup coconut flour
  • ½ tablespoon lemon juice
  • ½ small red onion
  • ½ teaspoon salt, sea salt
  • â…“ cup whole ground flaxseed meal by bob's red mill
  • ¼ cup almond milk
  • â…› teaspoon black pepper

Instructions

  1. Heat a tablespoon of olive oil in a skillet over a low/medium heat. Finely dice the onion and add to the skillet. Cook gently until tender, golden and starting to crisp at the edges. Remove from the skillet with a slotted spoon and set to one side.
  2. Add the bacon to the skillet. Cook through until crisp and golden on both sides. Set aside to cool, then chop into small chunks.
  3. Add the ground almonds, coconut flour, flaxseed, onion powder, baking soda, black pepper, salt, and erythritol to a food processor. Blend together until well combined. At this stage you can use an alternative sweetener if desired or omit entirely if preferred.
  4. Add the grated cheese to a microwaveable bowl. Microwave briefly until the cheese has completely melted. Alternatively, you can set the bowl over a double boiler on the stove and heat through until melted. Add the melted cheese and cream cheese to the food processor. Blend together until well combined. You should have a chunky crumb consistency.
  5. Crack the egg into the food processor. Add the almond milk, lemon juice and 1 tablespoon of olive oil. Blend again until well combined and a dough forms. The dough should hold together well and will be slightly tacky.
  6. Preheat the oven to 300 degrees Fahrenheit. Transfer the dough to a large mixing bowl. Add the chopped bacon and cooked onion and knead into the dough mixture so they are evenly spread throughout.
  7. Line a shallow oven tray with baking paper. Turn the dough out onto the lined oven tray. Divide into four even portions.
  8. Roll the dough into balls and push your thumb gently through the middle to create a hole. Mould the dough carefully into bagel shapes and arrange across the tray.
  9. Lightly brush the bagels all over with the remaining olive oil. Transfer to the oven to bake for 20-25 minutes or until completely cooked through and golden brown all over. Set to one side to cool before serving.
