These bacon wrapped artichokes are stuffed with oozy mozzarella then baked and pan fried until crisp and golden.

These make for a great snack or party appetizer!

Ingredients

  • 6 heart artichoke hearts or globe, canned in oil mixture
  • 6 slice – 6" long bacon
  • 2 tablespoon, grated mozzarella cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Pat the artichokes dry and shake off any excess liquid or brine. Wrap one slice of bacon around the outside of each artichoke heart.
  3. Divide the grated mozzarella evenly between the center of the artichoke hearts. Arrange across a shallow oven tray and bake for 15 minutes until the cheese has melted and the bacon is cooked.
  4. Heat the olive oil in a frying pan over a medium/high heat. Add the bacon wrapped artichokes to brown and crisp the bacon on each side.
