These bacon wrapped artichokes are stuffed with oozy mozzarella then baked and pan fried until crisp and golden.
These make for a great snack or party appetizer!
Ingredients
- 6 heart artichoke hearts or globe, canned in oil mixture
- 6 slice – 6" long bacon
- 2 tablespoon, grated mozzarella cheese
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Pat the artichokes dry and shake off any excess liquid or brine. Wrap one slice of bacon around the outside of each artichoke heart.
- Divide the grated mozzarella evenly between the center of the artichoke hearts. Arrange across a shallow oven tray and bake for 15 minutes until the cheese has melted and the bacon is cooked.
- Heat the olive oil in a frying pan over a medium/high heat. Add the bacon wrapped artichokes to brown and crisp the bacon on each side.
