This bacon wrapped okra is stuffed with a spiced tomato cream cheese and baked until crisp and golden.
This makes for a great sharing snack or even a side dish.
Ingredients
- 8 slice – 6" long bacon
- 6 ounce okra
- 2 teaspoon tomato puree, no salt added
- 1 ½ teaspoon cajun seasoning by spice time
- 1 medium – 4 1/8" long scallions
- ⅓ cup cream cheese spread
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Clean the okra and cut off the tops and tips. Carefully run a sharp knife lengthwise down each okra, taking care not to slice all the way through.
- Finely slice the scallion and add to a mixing bowl with the cream cheese, spices, and tomato purée. Mix together well to combine.
- Carefully prize each okra open and stuff with equal amounts of the cream cheese filling.
- Slice the bacon strips in half and wrap a half around each stuffed okra.
- Transfer to the oven to bake for 23 – 25 minutes until cooked through and the bacon is golden brown.
