Who can deny the savory combo of mozzarella cheese, juicy tomato, and a dash of balsamic vinegar? For a quick fix, pair these ingredients with baked slices of deli chicken for a yummy and light snack!

Ingredients

  • 6 slice chicken lunchmeat, white meat
  • 6 tablespoon, shredded mozzarella cheese
  • 6 grape grape tomato
  • ¾ teaspoon balsamic vinegar

Instructions

  1. Preheat an oven to 350 degrees. Line a 6-ct muffin tin with a slice of deli chicken in each tin. If necessary, use a biscuit cutter or cookie cutter to cut your chicken slices into circles. Distribute 1 tablespoon of shredded mozzarella in the base of each chicken cup.
  2. Dice the grape tomatoes and place the equivalent of 1 in each chicken cup. Drizzle ⅛ teaspoon balsamic vinegar over the tomatoes in each cup.
  3. Bake the tray for 13-15 minutes in the oven. Allow to cool before enjoying. Garnish with fresh basil if you have it on hand!
