This delicious snack or appetizer is baked in 20 minutes or less! Crispy, salty prosciutto bakes around slices of juicy tomato and thick, warm goat cheese.

Ingredients

  • 6 slice prosciutto
  • 2 ½ ounce roma tomato
  • 3 ounce goat cheese, soft
  • ¼ teaspoon italian seasoning

Instructions

  1. Preheat an oven to 350 degrees. Spray a 6ct. muffin tray with pan spray and form a cup with a single piece of prosciutto inside each tin. Make sure the bottom of the muffin tins are covered and no space is left open.
  2. Slice 6, ¼-inch thick slices from a roma tomato. Choose a tomato whose width is smaller than the muffin tins. Lay a slice at the base of each prosciutto cup. Slice 6, ½-oz slices of goat cheese from a log and layer these on top of the tomato slices. Sprinkle Italian seasoning over all the goat cheese.
  3. Bake the tray for 18-20 minutes. The prosciutto will turn crispy and naturally close around the tomato slice, and the goat cheese will become warm and soft throughout.
