This is about as healthy as a BLT can get! Crunchy bacon, crisp lettuce, and super juicy heirloom tomatoes are all wrapped up in a wrap made of fresh cucumber. Slice it into bite sized rolls for a light lunch or a delicious snack!

Ingredients

  • 2 slice – 6" long bacon
  • 2 ½ ounce cucumber, raw, with peel
  • ½ ounce romaine lettuce
  • 1 ½ ounce tomato

Instructions

  1. Cook your bacon slices to a crisp over the stove. Crunchy bacon is good for this recipe! Set the cooked bacon aside to cool until Step 3.
  2. Use a vegetable peeler to peel away approx 12 slices (equaling the ingredient weight listed) from a whole cucumber. Make sure the slices are wide with sturdy edges. Overlap the slices slightly, as pictured, creating a rectangle. Use paper towels to soak up the excess moisture from the cucumber.
  3. Tear and arrange the romaine lettuce on top of the cucumber. Arrange the bacon and thin slices of tomato also as pictured.
  4. Starting at the end with the bacon, roll the cucumber into a tight roll, tucking the other end under the roll. Slice the cucumber roll into 4 pieces. You may use toothpicks to hold your rolls in place.
