This is about as healthy as a BLT can get! Crunchy bacon, crisp lettuce, and super juicy heirloom tomatoes are all wrapped up in a wrap made of fresh cucumber. Slice it into bite sized rolls for a light lunch or a delicious snack!
Ingredients
- 2 slice – 6" long bacon
- 2 ½ ounce cucumber, raw, with peel
- ½ ounce romaine lettuce
- 1 ½ ounce tomato
Instructions
- Cook your bacon slices to a crisp over the stove. Crunchy bacon is good for this recipe! Set the cooked bacon aside to cool until Step 3.
- Use a vegetable peeler to peel away approx 12 slices (equaling the ingredient weight listed) from a whole cucumber. Make sure the slices are wide with sturdy edges. Overlap the slices slightly, as pictured, creating a rectangle. Use paper towels to soak up the excess moisture from the cucumber.
- Tear and arrange the romaine lettuce on top of the cucumber. Arrange the bacon and thin slices of tomato also as pictured.
- Starting at the end with the bacon, roll the cucumber into a tight roll, tucking the other end under the roll. Slice the cucumber roll into 4 pieces. You may use toothpicks to hold your rolls in place.
