About

There’s no fish here, just bacon, lettuce, and tomato! Full strips of bacon serve as the outside part of the sushi, which wraps around the other BLT ingredients. There is also a dijon-flavored cream cheese spread blended with fresh herbs to add a tangy flavor and creamy texture. A sprinkle of your favorite brand of Everything But The Bagel Seasoning makes this BLT sushi taste just like a sandwich without all the carbs. This Keto recipe makes a great snack or lunch, and it’s especially great for picky eaters. You can make a large batch of BLT sushi in advance to include in your meal prepping or to serve for a group. Even non-keto eaters will enjoy the bite-sized treat! Keep the finished recipe stored in an airtight container in your refrigerator for up to 3 days.

What Is Everything But The Bagel Seasoning?

Everything But The Bagel seasoning is inspired by one of the most popular types of bagels: everything bagels! Everything bagels are typically made with a seasoning blend of dried onion, garlic, sesame seeds, and poppyseeds. So the seasoning is quite literally everything but the bagel itself. If you don’t happen to have this spice blend at home, you can make your own from the spices listed.

Ingredients

  • 8 slice – 6" long bacon
  • 2 oz cream cheese
  • ¼ teaspoon dijon mustard
  • ½ tsp, cut pieces chives
  • 1 teaspoon everything but the bagel seasoning
  • 1 oz shredded lettuce
  • 1 oz tomato

Instructions

  1. Make the bacon so it has time to cool before you assemble the sushi. Cook the bacon at medium to high heat over your stove, but do not cook the bacon to crispy. The bacon needs to be flexible so it can wrap around the other ingredients, and crispy bacon will only break. When the bacon is cooked through and still chewy, remove the strips to cool on a clean working surface.
  2. Make the cream cheese spread by blending the cream cheese in a stand mixer on high speed until it is lump-free and at room temperature. You may pull the cream cheese out to soften prior to making the recipe to help you out. Blend dijon mustard and minced chives into the cream cheese until you have a smooth, creamy spread. You may continue on to the next step or you can put the spread in your refrigerator to chill and firm up a little.
  3. Use some paper towels to absorb any excess grease from the bacon, otherwise, the cream cheese spread won’t stick to the bacon. Use the back of a spoon or a butter knife to spread about ¼ tablespoon of cream cheese across each strip of bacon. Sprinkle ⅛ teaspoon of your favorite brand of Everything But The Bagel seasoning along each strip of bacon as well. Over each portion of cream cheese, add ⅛ ounce of shredded lettuce. Include ⅛ ounce of thin-sliced grape tomatoes (approximately ½ a tomato) on the wider end of each strip of bacon.
  4. Starting at the wider end with the sliced tomatoes, roll each strip of bacon up into a piece of sushi. You can simply tuck the other end of bacon under each piece of sushi, but you can also secure each piece with a toothpick if they’re giving you trouble. Enjoy immediately or chill in your refrigerator for a cold snack. Carb Manager has many Keto condiment recipes for dipping sauces you may use. Some suggestions are made in the introduction at the top of the recipe.
