Any hot sauce addicts out there? Get your fix with this buffalo chicken meatball recipe that serves as a snack, a side, or a great addition to salads, sandwiches, and pizzas! Frank’s Hot Sauce is a great brand to use, but you may use any keto-friendly wing sauce or buffalo sauce that you like!

Ingredients

  • ½ tablespoon butter, salted
  • ½ cup red hot buffalo wing sauce by frank's
  • 12 ounce boneless skinless chicken breast
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon oregano, dried
  • ¼ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ tablespoon red hot buffalo wing sauce by frank's
  • ½ tablespoon olive oil

Instructions

  1. *Melt 1 TB of butter. Then, combine it in a bowl with the 1 cup of Frank’s Hot Sauce. Set this bowl aside for later use.
  2. In a food processor, combine the raw chicken breast with all the remaining ingredients except for the olive oil. You may want to pat the chicken breast dry with a paper towel and then roughly chopping it into pieces before adding it to the food processor.
  3. Form approximately 8 meatballs that are about 2-inches wide each.
  4. Heat the olive oil in a skillet not much larger than the space your meatballs will take up to a medium-high heat. Place the chicken meatballs evenly in the oil. Slowly rotate the meatballs with a pair of cooking tongs until all the sides are golden brown, and the chicken is cooked through (165 degrees internal temp.). This can take 5-10 minutes, depending on your heat level.
  5. Turn the heat down to a medium-low, and pour the butter-hot-sauce mixture from earlier over the meatballs. Cook until the sauce comes to a gentle simmer, and all ingredients are heated through.
  6. Enjoy as is with toothpicks for a snack or appetizer, or add the buffalo chicken meatballs to other favorite Carb Manager meals!
