Caprese bites are nothing new, but they make an excellent quick snack for busy dieters on the go. They can also make a great side with a light lunch. Beefsteak tomatoes will provide you with firm slices that can hold your mozzarella and toppings but still have juicy centers with a lot of flavor. Yum!

Ingredients

  • 4 ½ oz, raw, yields tomato slice
  • 4 oz cheese mozzarella whole milk
  • ¼ ounce basil fresh
  • ¼ teaspoon olive oil
  • ¼ teaspoon balsamic vinegar

Instructions

  1. Slice 4 slices from the tomato, each one being about an ounce. Slice 4, 1-oz slices from a fresh ball of mozzarella as well and place a slice on top of each tomato.
  2. Top the caprese bites with an even distribution of fresh basil as well as drizzles of olive oil and balsamic vinegar. Enjoy!
