Simple yet tasty, these stuffed celery sticks are a great high fat, low carb snack that comes to together in a matter of minutes – perfect when hunger strikes!

A tasty combination of salty blue cheese, sweet blueberries and crunchy walnuts these are ideal lunch box snacks.

The recipe calls for 2 tablespoons of blueberries – this equates to around 12 blueberries, 3 per celery stick.

Ingredients

  • 2 tablespoon blueberries
  • 3 tablespoon blue cheese by stella
  • 4 medium stalk (7-1/2 in. – 8 in. long) celery
  • 1 tablespoon walnuts

Instructions

  1. Remove the ends of the celery sticks and arrange side by side on a clean work surface.
  2. Divide the cheese evenly between the four celery sticks, filling the center of the celery.
  3. Divide the chopped walnuts evenly between the 4 sticks, pushing them gently into the blue cheese.
  4. Add three blueberries to each stuffed celery stick, pressing them gently into the cheese. Serve immediately.
