For an easy snack when you’re CRAVING cheese, these cheese-filled mushrooms are healthy and exactly what you need. Set them in your oven and forget until the timer goes off! You are welcome to substitute with your favorite mild cheese.

Ingredients

  • 6 ½ ounce brown mushrooms (italian or crimini mushrooms), raw, high in vitamin d
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • 3 ounce mozzarella cheese

Instructions

  1. Preheat an oven to 375 degrees. Lay a sheet of aluminum foil flat. Remove the stems from your mushrooms and lay the caps open-faced in the center of the foil (listed ingredient weight is yield after removing stems). Sprinkle the salt and pepper over the mushrooms.
  2. Cut your cheese into 1-inch cubes so you have one piece per mushroom. Stuff each cap with a cheese cube.
  3. Fold the aluminum foil over the mushrooms, wrapping in additional foil if necessary. When the mushrooms are encased in the foil, set the package onto the center rack of your oven – no tray necessary. Bake for 30 minutes or until cheese is completely melted and mushrooms are soft.
