These may not be quite right for a pasta dish, but these cheeseburger meatballs are certainly a meal you will want to include in your meal preps! Enjoy all your favorite parts of an American favorite with the carbs, bloat, or regret you may have had in the past! You could even eat these meatballs over a bed of greens as a salad to complete the full cheeseburger taste.

Ingredients

  • 2 pound ground chuck 80% lean 20% fat by kroger
  • ½ teaspoon salt
  • ½ teaspoon black pepper, ground
  • ½ teaspoon onion powder
  • 1 teaspoon mustard powder
  • 1 teaspoon paprika
  • 1 ½ cup, shredded cheddar cheese, natural
  • 3 tablespoon mayo
  • ½ tablespoon tomato ketchup
  • ¾ ounce pickles

Instructions

  1. Preheat an oven to 400 degrees. In a large mixing bowl, combine the ground chuck with all the seasonings and the cheddar cheese.
  2. Line a large sheet tray with aluminum foil and spray gently with pan spray. Use your hands to form approximately 24, 2-inch meatballs.
  3. Bake the tray of meatballs for 25 minutes. While the meatballs are baking, make the special sauce topping. Stir together the mayo and ketchup. Then, finely dice your pickle and stir this in as well. Then finer you dice the pickle, the better the result will be.
  4. After baking, place about a ½ teaspoon of special sauce in a dollop atop each meatballs. You do not need to spread the sauce, as it will begin to spread by itself because of the heat.
  5. Bake the meatballs for an additional 10 minutes. Serve the meatballs as a snack with toothpicks or include it in your meal prepping.
