These flavorsome avocado boats are loaded with creamy yogurt, rich tahini, shredded chicken, aromatic mint, and topped with crunchy pine nuts.
These make for a simple snack in between meals.
Ingredients
- 1 ½ ounce rotisserie chicken
- 2 teaspoon tahini
- 1 tablespoon yogurt
- 1 tablespoon peppermint, fresh
- 1 teaspoon lemon peel or zest raw
- 2 teaspoon, whole pieces pine nuts
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Slice the avocado in half, lengthways and remove the stone.
- Finely chop the mint leaves and add to a mixing bowl, along with the yogurt, tahini and lemon zest.
- Roughly shred the chicken into the bowl, season, and stir well to coat in the dressing.
- To serve, divide the chicken mixture evenly between the two avocado halves and scatter with pine nuts.
