These sweet chocolatey bars are loaded with healthy fats from mixed nuts, coconut oil and butter. The nuts are pulsed to form a thick crumb consistency then baked until golden.
These are a great option for breakfast, dessert or snacking on the go!
Ingredients
- 1 teaspoon vanilla extract
- 1 tablespoon cocoa powder, unsweetened
- 1 tablespoon unsalted butter
- 1 tablespoon coconut oil
- 1 cup filberts, raw
- ½ cup, slivered almonds, raw
- ½ cup, ground almonds, raw
- ½ cup pecans, raw
- ¼ cup 100% pure erythritol by now
- ⅛ teaspoon salt, sea salt
Instructions
- Preheat the oven to 300 degrees Fahrenheit and line a loaf tin with baking paper.
- Add the flaked almonds, ground almonds, pecans and filberts to a food processor. Pulse a few times to create a chunky crumb/oat like consistency.
- Add the butter, coconut oil, cocoa powder, erythritol, vanilla and salt to a small pan over a low heat. Stir well to combine, melting the fats, until you have a smooth chocolate sauce.
- Remove the pan from the heat and tip the nut mixture into the chocolate sauce. Stir well to combine, coating the nuts evenly.
- Spoon the mixture into the lined loaf tin and, once cool, press into an even layer. Transfer to the oven to bake for 18-20 minutes until cooked through and the nuts are golden brown.
- Set aside to cool completely then transfer to the fridge for 1 hour to set further. Slice into 6 individual bars to serve.
