These sweet chocolatey bars are loaded with healthy fats from mixed nuts, coconut oil and butter. The nuts are pulsed to form a thick crumb consistency then baked until golden.

These are a great option for breakfast, dessert or snacking on the go!

Ingredients

  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder, unsweetened
  • 1 tablespoon unsalted butter
  • 1 tablespoon coconut oil
  • 1 cup filberts, raw
  • ½ cup, slivered almonds, raw
  • ½ cup, ground almonds, raw
  • ½ cup pecans, raw
  • ¼ cup 100% pure erythritol by now
  • ⅛ teaspoon salt, sea salt

Instructions

  1. Preheat the oven to 300 degrees Fahrenheit and line a loaf tin with baking paper.
  2. Add the flaked almonds, ground almonds, pecans and filberts to a food processor. Pulse a few times to create a chunky crumb/oat like consistency.
  3. Add the butter, coconut oil, cocoa powder, erythritol, vanilla and salt to a small pan over a low heat. Stir well to combine, melting the fats, until you have a smooth chocolate sauce.
  4. Remove the pan from the heat and tip the nut mixture into the chocolate sauce. Stir well to combine, coating the nuts evenly.
  5. Spoon the mixture into the lined loaf tin and, once cool, press into an even layer. Transfer to the oven to bake for 18-20 minutes until cooked through and the nuts are golden brown.
  6. Set aside to cool completely then transfer to the fridge for 1 hour to set further. Slice into 6 individual bars to serve.
