These deliciously sweet rum balls make a great Keto Christmas recipe, perfect for snacking. Loaded with fats and flavor, these low carb treats combine almonds, coconut oil, a hint of rum, warming spices and dried cranberries to create a decadent holiday snack. Once made, these need to be kept refrigerated, ready to grab and go when you fancy something sweet.

Is Rum Keto?

Rum is a great zero carb alcohol option for anyone following a Keto diet and can be enjoyed on occasion without taking you out of Ketosis. We have used a generous tablespoon of rum to flavor our Christmas Keto recipe. However, once you have blended the mixture you can taste and add more if required to suit your personal tastes. Please be sure to adjust your macros to account for any changes made to the original recipe.

Hints and Tips

Once the mixture is prepared, it needs to chill so that it is firm enough to shape and roll. If you want to make these ahead, you can prepare the mixture and leave in the fridge overnight to firm before rolling the next day. If you would like to speed up the process, the mixture can be popped into the freezer for half an hour to set. Once shaped and rolled, the rum balls will need to be stored in an airtight container in the fridge until ready to serve.

Ingredients

  • 3 tablespoon coconut oil
  • 2 tablespoon almond butter, unsalted
  • 2 tablespoon 100% pure erythritol by now
  • 1 tablespoon rum
  • 1 cup, ground almonds, raw
  • 1 teaspoon ginger, ground
  • 1 teaspoon cinnamon
  • ½ tablespoon reduced sugar craisin dried cranberries by ocean spray
  • â…› teaspoon salt, sea salt

Instructions

  1. Add the ground almonds, coconut oil, almond butter, rum, cinnamon, ground ginger, salt and erythritol to a food processor. Blend together until well combined and smooth. You may use an alternative low carb sweetener if desired, adjusting the quantities accordingly to taste. You may also add more or less spices or rum to suit your preference.
  2. Finely chop the cranberries. Spoon the festive rum mixture into a bowl and add in the cranberries. Stir them evenly throughout the mixture. Cover the mixture and place in the fridge for a few hours, or until firm enough to scoop with a spoon. You may make the mixture ahead and leave this to chill overnight if needed.
  3. Scoop the chilled mixture into 16 even-sized portions. Roll each portion into a ball with your hands. If the mixture gets a bit soft when shaping, you can place in the freezer briefly to chill. Once shaped, store the rum balls in an airtight container in the fridge until ready to serve.
