I love how quick and easy this mug cake comes together and the cinnamon flavor really hits the spot and pairs perfectly with the almond scented cake.

Ingredients

  • 2 tablespoon butter
  • 3 tablespoon almond flour
  • ¼ cup the ultimate icing sugar replacement by swerve
  • ¼ teaspoon almond extract
  • ½ teaspoon baking powder
  • 1 large egg
  • ⅛ teaspoon cinnamon

Instructions

  1. Microwave butter in a mug until melted about 20 seconds.
  2. Add the almond flour, sweetener, almond extract, a pinch of salt, baking powder and egg mixing well with a fork.
  3. Microwave on HIGH for 60 seconds, do not overcook! Sprinkle cake with a little cinnamon and enjoy hot! Top with whipped cream if desired!
