These sweet chocolatey almonds are coated in a low carb syrup and tossed with cocoa powder and cinnamon to make a deliciously indulgent snack.

These are a great pick me up between meals or after dinner treat.

Ingredients

  • 3 tablespoon drinking water
  • 1 ¼ cup almonds, raw
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder, unsweetened
  • 1 teaspoon cinnamon, ground
  • ⅓ cup 100% pure erythritol by now
  • ⅛ teaspoon salt, sea salt

Instructions

  1. Add the erythritol, vanilla, salt and water to a small pan over a high heat. Bring up to a boil then simmer for 2-3 minutes to bubble and reduce for a few minutes.
  2. Remove the pan from the heat and add the almonds. Stir well, coating them in the syrup.
  3. Add the cocoa powder and cinnamon to a small mixing bowl and stir to combine.
  4. Tip the almonds into a mixing bowl and sprinkle over the cocoa mixture. Stir well to combine, coating the almonds in the powder. Set aside to cool and break up any large chunks once set and solidified.
