These keto Christmas energy balls are rich with crunchy coconut and sweet cranberries.
These are a great snack to have on standby in the fridge over the holidays. Ideal for an afternoon pick me up.
Ingredients
- 2 tablespoon 100% pure erythritol by now
- 2 tablespoon desiccated unsweetened coconut by compass
- 1 tablespoon reduced sugar craisin dried cranberries by ocean spray
- ¼ cup coconut oil
- ½ cup almond butter, unsalted
- 2 ounce food cupboard home baking almonds ground by sainsbury's
- ½ cup desiccated unsweetened coconut by compass
Instructions
- Add the almond butter, ground almonds, coconut oil, ½ cup of desiccated coconut and the erythritol to a food processor, and blend well to combine.
- Transfer the mixture to a bowl. Finely chop the cranberries and add to the mixture. Stir well to combine.
- Transfer the mixture to the fridge for 30 minutes to firm. Remove the mixture from the fridge and divide and roll into 15 even balls.
- Dust the balls with the remaining desiccated coconut to serve. Keep chilled.
