Ingredients

  • 8 ounce hamburger or ground beef, 80% lean
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large – approx 4" – 6" long jalapeno peppers
  • 2 ½ ounce red bell peppers, raw
  • 1 teaspoon cumin, ground
  • 2 teaspoon garlic powder
  • 2 ½ cup, shredded shredded cheddar
  • ½ cup heavy cream

Instructions

  1. In a shallow skillet, cook the ground beef with the salt and pepper on medium-high heat. Cook the beef all the way through and bring it to a slight crisp, if you prefer.
  2. Dice the jalapeno and red bell pepper. Combine the ground beef with all the remaining ingredients in a crock pot or slow cooker. Cook the ingredients on high heat for 2 hours.
  3. Stir the ingredients together before serving. You can garnish your queso with chopped cilantro at your discretion. Enjoy!
