Our popular baked keto cup snacks, this time influenced by the Cuban sandwich. Baked salami cups are filled with chopped pickle, a squirt of dijon mustard, and a little blanket of swiss cheese.

Ingredients

  • 6 medium slice – 3 1/8" diameter x 1/16" – each 0.4 ounce salami
  • 1 ½ ounce pickles
  • 3 teaspoon dijon mustard
  • 1 ½ slice (from pre-sliced package) – each 3/4 ounce swiss cheese

Instructions

  1. Preheat an oven to 350 degrees. In a 6-ct muffin tin, arrange 6 slices of salami. Inside each one, arrange chopped pickle and ½ tsp of dijon mustard.
  2. Cut the cheese into 6 quarter pieces. Place a piece on top of each cuban cup filling. Bake the tray for 12 minutes – until the edges of the cups are very crisp.
