Ingredients

  • 24 jumbo shrimp, cooked from fresh
  • 2 ½ ounce smoked salmon
  • 2 teaspoon, cut pieces chives
  • 2 teaspoon lemon juice
  • 1 medium cucumber
  • 1 each avocado
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Peel the avocado and remove the stone. Roughly dice the flesh and add to a bowl. Add the lemon juice, salt and pepper. Roughly mash with a fork to combine.
  2. Slice the cucumber into 12 even-sized discs. Each disc should be about a 1/4 inch thick. Arrange the cucumber slices across a clean worktop or board.
  3. Divide the crushed avocado evenly between the cucumber slices, covering the top of each. Divide the salmon into 12 even portions. Fold and arrange over the crushed avocado.
  4. Finely chop the chives. Arrange two jumbo shrimp on top of one of the bites. Repeat with the remaining bites, so each is topped with shrimp. Scatter the bites with the chopped chives. Refrigerate until ready to serve.
