This simple snack comes together in minutes! For any lovers of Italian subs, you’ll need this recipe in your arsenal to satisfy any cravings on the keto diet. Cool cucumber counteracts the slightly spicy deli meats and is all rounded out with some provolone cheese.

Ingredients

  • 2 ½ ounce cucumber
  • 3 slice (from pre-sliced package) – each 3/4 ounce provolone cheese
  • 4 medium slice – 3 1/8" diameter x 1/16" – each 0.4 ounce salami
  • 4 slice – 4 1/4" x 4 1/4" x 1/16" – each 0.75 ounce capicola
  • 4 slice – each 0.1 ounce pepperoni

Instructions

  1. Use a vegetable peeler to peel away approx. 12 slices from a whole cucumber, totaling the weight listed in the ingredients. Overlap the slices of cucumber lengthwise to create a rectangular layer about 8-9 inches wide. Pat the cucumber dry with a paper towel.
  2. Cut your provolone slices into halves. Layer the provolone on top of the cucumber as pictured.
  3. Create 3 layers of whole slices of salami, capicola, and pepperoni. Arrange the slices as necessary to create an even layer of meat.
  4. Starting from the edge closest to you, roll up the cucumber tightly to create a long roll. This style is very similar to how you would roll sushi. Slice away the ends, if necessary, and cut the roll into 4 fat pieces. Enjoy right away!
