This is a super easy snack to make when you really crave something fresh tasting. This recipe is left with the option to add on more flavors you enjoy, such as a squeeze of lemon juice, a keto condiment, or fresh dill or basil for garnish.

Ingredients

  • 5 ounce cucumber
  • 2 ounce tomato
  • ⅛ teaspoon salt
  • ¼ teaspoon paprika
  • ½ teaspoon olive oil
  • 1 ⅛ tablespoon rice vinegar
  • 1 ¾ ounce boston lettuce

Instructions

  1. In a small bowl, combine diced cucumbers, chopped tomato, salt, paprika, olive oil, and vinegar.
  2. Arrange 6 outer leaves of boston lettuce on a plate. Use a slotted spoon to distribute the cucumber tomato salad into the leaves and enjoy!
