These simple cucumber bites are topped with a helping of creamy and spicy scrambled eggs and a touch of fresh parsley.
These are a great idea for snacking, party appetisers or simply added to a lunch time salad!
Ingredients
- 3 medium raw egg
- 3 teaspoon curry powder
- 1 tablespoon heavy cream
- 1 tablespoon butter
- 1 tablespoon parsley, fresh
- ⅓ large – 8 1/4" long cucumber
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Add the eggs to a bowl along with the curry powder, cream, salt and pepper. Beat well to combine.
- Melt the butter in a saucepan over a medium heat. Add the beaten egg and let it settle for a moment before scrambling with a fork. Cook to preference.
- Whilst the eggs are cooking, slice the cucumber into 20 even sized discs – about 1/4 inch thick.
- Divide the curried egg between the cucumber discs.
- Scatter with fresh parsley to serve.
