Snacks are very important to have around when you are on the keto diet. If you have snacks prepped and ready to go, it’s easy to reach for a keto approved snack versus something that could take you out of ketosis. Nuts help me stay full and are loaded with healthy fats and chocolate is a good way to satisfy a sweet tooth. Feel free to top these clusters with any other freeze dried low carb berry like raspberries or blueberries! I also like to keep these in the freezer until I’m ready to eat them as it makes them extra cold, crunchy and delicious.

Ingredients

  • 2 ½ ounce pure 85% dark chocolate non gmo by theo
  • ½ cup blanched slivered almonds by blue diamond
  • ¼ teaspoon sea salt

Instructions

  1. Break dark chocolate into pieces and melt in the microwave in 30 second intervals stirring well each time. Once the chocolate is mostly melted and there are a few small unmelted pieces left, keep stirring as they will melt on their own.
  2. Add in the almonds. Stir for 30 seconds until the chocolate thickens and cools slightly.
  3. Scoop onto a parchment lined baking sheet in heaping teaspoonfuls to make 10 clusters. Sprinkle with flaky sea salt! Freeze until set. Once set, keep in freezer until ready to eat.
