This deliciously crunchy trail mixed is loaded with heart and brain healthy nuts and seeds, tossed in warming spices and baked until golden. The toasted nuts are combined with tart dried cranberries and dark chocolate drops to serve.

This is a great option to have on hand throughout the week, perfect for snacking on the go or as a pick me up between meals.

Ingredients

  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ½ cup, sliced almonds, raw
  • ½ cup walnuts
  • 1 teaspoon coconut oil
  • 1 tablespoon maple flavored syrup by lakanto
  • 1 teaspoon ginger, ground
  • 1 teaspoon cinnamon, ground
  • ¼ teaspoon salt, sea salt
  • 1 tablespoon unsweetened whole cranberries by safeway
  • 1 tablespoon 100% unsweerened dark chocolate baking chips by pascha

Instructions

  1. Preheat the oven to 300 degrees Fahrenheit and line a shallow oven tray with baking paper.
  2. Add the seeds, flaked almonds and walnuts to a mixing bowl. Melt the coconut oil and add to the bowl along with the syrup, ginger, cinnamon and salt. Use your hands to rub the seasonings and syrup all over the nuts and seeds.
  3. Arrange the nut mixture in an even layer across the lined oven tray. Transfer to the oven to bake for 10-12 minutes until golden, turning halfway through. Set aside to cool completely.
  4. Return the cooled nut mixture to a mixing bowl. Roughly chop the cranberries and add to the bowl along with the chocolate chips. Toss to combine. Store in an airtight container until ready to serve.
