These goats cheese lollipops make for a great party snack over the holidays.

Chilled goats cheese is dipped in sweet lakanto syrup and coated with chopped walnuts and rosemary to create this sweet and savory treat!

This recipe requires a firm goats cheese.

Ingredients

  • 4 ½ ounce goat cheese, hard
  • 1 tablespoon maple flavored syrup by lakanto
  • ½ tablespoon rosemary, fresh
  • ¼ cup, chopped walnuts
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Transfer the goats cheese to a sheet of plastic wrap and roll into a tight log. Transfer to the fridge for 30 minutes to chill and firm.
  2. Whilst the cheese is chilling, finely chop the walnuts and the rosemary and add to a small bowl along with the salt and pepper. Mix well to combine . Add the lakanto to a separate bowl.
  3. Remove the cheese from the fridge and slice into 10 even rounds. Form each into a rough lollipop shape and skewer each with a toothpick.
  4. Dip each lollipop in the syrup and then dip each lollipop in the chopped nut mixture to coat. Serve immediately.
