This is an excellent Keto appetizer recipe that is perfect for filling macros with healthy fats and plenty of protein. Keto Herbed Ricotta Dip goes wonderfully with low-carb vegetables like sliced cucumbers, celery, a few carrots if your carb count allows. Creamy ricotta cheese is whipped together with kosher salt, extra virgin olive oil, garlic powder, freshly chopped rosemary, and chopped parsley. The result is an ultra-creamy dip that would be great on top of a luscious ribeye steak as well.

What kind of ricotta cheese should I use?

Please use whole milk ricotta rather than low fat.

Can I use dried herbs?

Fresh herbs are by far superior, but if you need to use dried herbs, please feel free to. If using dried herbs, allow the dip to sit overnight for the flavors to mingle before serving.

Can I use fresh garlic?

Yes, feel free to use fresh garlic! Be sure to grate it on a Microplane so it is tiny and will incorporate well into the dip.

Ingredients

  • 15 oz ricotta cheese, whole milk
  • 1 ½ teaspoon coarse kosher salt
  • 3 tablespoon extra virgin olive oil
  • ½ teaspoon garlic powder
  • 1 teaspoon rosemary, fresh
  • 2 teaspoon parsley

Instructions

  1. Add the ricotta to a medium-sized mixing bowl. Add the kosher salt, 2 tbsp olive oil, garlic powder, chopped rosemary, and chopped parsley to the ricotta. Mix well using a spatula. Alternatively, you could whip the ricotta in the bowl of a stand mixer fitted with a paddle attachment.
  2. Place the ricotta mixture in a bowl and top it with the remaining olive oil. Decorate the top of the ricotta dip with additional herbs if desired. The dip will store in the fridge wrapped airtight for up to seven days.
