It’s always a treat to learn that a well-loved snack is already keto-friendly in its original form. Jalapeno Poppers, when baked instead of fried, are a perfect snack or appetizer for your ketogenic macro count! Jalapenos are a low-carb food, and they get a boost of protein when wrapped in bacon. Try not to eat them all in one sitting!

Ingredients

  • 4 ounce cream cheese spread
  • ¾ cup, shredded cheddar cheese
  • 5 large – approx 4" – 6" long jalapeno peppers
  • 10 slice – 6" long bacon

Instructions

  1. Pre-heat an oven to 375 degrees, and prepare a sheet tray with a sheet of parchment paper. In a bowl, combine the cream cheese and shredded cheddar. You can use the back of a spoon or a fork to soften the cream cheese and make the mixture pliable.
  2. Prepare the jalapenos by removing the stems. Slice each one in half, and remove the seeds.
  3. Spoon the cheese filling into each jalapeno half, until all the filling is used up.
  4. Wrap each filled jalapeno half with a slice of bacon. Make sure to tuck the ends under the jalapenos and that the cheese filling is completely covered. Arrange the wrapped jalapenos on the prepared sheet tray.
  5. Bake the jalapeno poppers for 30 minutes or until the bacon is fully cooked and golden brown on the edges. Enjoy!
