  • 12 ounce boneless skinless chicken breast
  • ½ tablespoon olive oil
  • 1 tablespoon coconut milk
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon cinnamon
  • ½ teaspoon allspice, ground
  • ½ teaspoon spices nutmeg ground
  • ¼ teaspoon thyme, dried
  • ¾ teaspoon paprika
  • ½ teaspoon cayenne

Instructions

  1. Lay your chicken breast on a clean, flat surface and cut it up into 1-inch cubes. Place all the chicken cubes in a large ziploc bag.
  2. Add all the other ingredients into the bag. Move the chicken around until all the pieces are coated evenly. Then, zip up the bag and allow it to marinate in your fridge overnight or for at least 12 hours.
  3. The next day, preheat your oven to 375 degrees and soak six, 6-inch skewers in water. Once the skewers have soaked completely, fill each one with 5-6 pieces of marinated chicken.
  4. Spray a baking rack with pan spray and arrange the skewers on top. Place the rack in the oven, and bake the skewers for 35 minutes.
  5. Enjoy these chicken skewers as a hot or cold snack or as an addition to your meal!
