This recipe is just like the Carb Manager Cloud Chips, but expanded into one of everyone’s favorite flavors! These loaded chips are packed with baked potato goodness: bacon bits, cheddar cheese, and fresh chives. They will totally crush your craving for something crunchy and salty.
Ingredients
- 2 slice – 6" long bacon
- 2 large raw egg, white
- ¼ cup, shredded cheddar cheese, natural
- 1 tablespoon, cut pieces chives
Instructions
- Preheat an oven to 325 degrees and lightly spray a 12-count muffin tin with pan spray. In a small pan, cook your bacon until crispy. Once cooled, chop the bacon into fine bacon bits. Set this aside.
- In a stand mixer, whip your egg whites to stiff peaks. Gently whip in the cooled bacon bits, cheddar cheese, and chopped chives.
- Use a tablespoon measurer to scoop 1 TB of egg mixture into each muffin tin. Evenly disperse the remaining mixture into each muffin tin. Spread the mixture to create flat discs in the muffin tins.
- Bake the tray for 18 minutes or until the egg whites are dry and the edges are golden brown and crispy.
