Whole cremini mushroom caps are not only the perfect size and shape but also the perfect flavor complement for these pizza-themed snack stack. By slicing the mushroom caps in half like a sandwich, you can fill the two halves with slices of cheese and pepperoni for a yummy finger-food snack.

Ingredients

  • 8 each brown mushrooms (italian or crimini mushrooms), raw, high in vitamin d
  • 2 teaspoon olive oil
  • ½ teaspoon white wine vinegar by alessi
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper, ground
  • 1 teaspoon garlic
  • ¼ teaspoon crushed red pepper by simply organic
  • ¼ teaspoon basil, dried
  • 2 slice (from pre-sliced package) – each 3/4 ounce mozzarella cheese, whole milk
  • 8 slice – each 0.1 ounce pepperoni

Instructions

  1. Remove the stems from medium-sized mushrooms that are equal in size. Slice each mushroom cap in half like a sandwich. Toss the sliced mushroom caps in a bowl with the olive oil, vinegar, salt, pepper, garlic, red pepper, and basil. Wrap and set this bowl aside in your refrigerator to marinate at least 1 hour (but you may go longer for softer mushrooms).
  2. When done marinating, slice the mozzarella cheese into quarters and arrange single slices of pepperoni.
  3. Create the stacks by sandwiching a piece of cheese and pepperoni between 2 matching pieces of mushroom. Secure with a toothpick. For serving, make sure to drizzle any extra seasoned liquids from marinating over the stacks.
