These frozen yogurt cubes are a great post dinner treat or snack. The mixture is set within an ice cube tray, providing perfect bite sized portions ready to grab and go whenever you are in need of a sweet fix!

The recipe uses erythritol to sweeten the mixture, however you could omit this entirely or use you own preferred low carb sweetener.

Ingredients

  • 2 tablespoon cocoa powder, unsweetened
  • 1 ¼ cup yogurt, plain, whole milk
  • 1 tablespoon 100% pure erythritol by now
  • 1 tablespoon 100% unsweerened dark chocolate baking chips by pascha
  • 1 1/4 teaspoon peppermint extract

Instructions

  1. Add the yogurt, cocoa powder, and erythritol to a mixing bowl. Stir well to combine until completely smooth.
  2. Add the chocolate chips and mint extract to the bowl and stir well.
  3. Divide the mixture evenly between individual ice cube moulds (you should get 14 from the mixture)
  4. Transfer to the freezer for 3-4 hours until set.
