This mozzarella bruschetta is fast and simple to put together. You can enjoy it as a snack with your favorite keto crisps/toast/chips, or you can top a hot chicken dish with this mix for some added fat and flavor. The original recipe here makes about 1 cup of bruschetta.

Ingredients

  • 4 ounce mozzarella cheese, whole milk
  • 1 teaspoon garlic
  • 4 leaf basil
  • 2 tablespoon no salt added crushed tomatoes by hunt's
  • 1 teaspoon olive oil

Instructions

  1. Finely slice and then dice a fresh ball of mozzarella. The smaller you dice the mozzarella, the more enjoyable it will be to use as a bruschetta.
  2. In a bowl, mix together the remaining ingredients with the mozzarella. You can serve immediately or wrap and refrigerate overnight for the flavors to marinate with the mozzarella.
