These simple skewers are loaded with Mediterranean vegetables, olives and mozzarella cheese and served with a refreshing mayo dip.

These are a great snacking option, starter or even lunch served with a green salad.

Ingredients

  • 8 medium black olives
  • 4 piece tomatoes sun dried or sundried packed in oil
  • 2 ½ ounce mozzarella cheese
  • 2 tablespoon mayonnaise
  • 1 tablespoon basil, fresh
  • 1 tablespoon lemon juice
  • ½ small yellow bell peppers, raw or blanched, marinated in oil mixture

Instructions

  1. Slice each sundried tomato in half and dice the mozzarella and bell pepper into 8 even chunks. Thread a piece of tomato, olive, mozzarella and pepper onto a toothpick then repeat with 7 more toothpicks.
  2. Add the mayonnaise to a small mixing bowl with the lemon juice and roughly chop the basil. Mix all together to combine. Serve the lemon basil mayo with the skewers for dipping.
