These kale chips are so crisp and salty, I really don’t miss regular chips. They are great on their own or as a topping for a soup instead of croutons. Of course you could buy kale chips at the store for triple the price, but it is worth a little effort to make them yourself at home!
Ingredients
- 6 ounce kale
- ⅓ cup olive oil
- 1 teaspoon kosher salt
Instructions
- Preheat oven to 350 F. Strip kale leaves from their stems and rip each leaf into small pieces. The leaves do not need to be perfect.
- Wash the leaves and dry in a salad spinner. If you do not have a salad spinner, lay them flat to dry on a sheet tray and tap dry with paper towels.
- Place kale leaves in a bowl and toss well with olive oil and salt.
- Distribute leaves between 2 sheet trays. You do not want the leaves to touch very much so they will get nice and crispy. Bake for 25-30 minutes or until light, slightly browned and very crispy!
- Enjoy your homemade kale chips.
