These kale chips are so crisp and salty, I really don’t miss regular chips. They are great on their own or as a topping for a soup instead of croutons. Of course you could buy kale chips at the store for triple the price, but it is worth a little effort to make them yourself at home!

Ingredients

  • 6 ounce kale
  • ⅓ cup olive oil
  • 1 teaspoon kosher salt

Instructions

  1. Preheat oven to 350 F. Strip kale leaves from their stems and rip each leaf into small pieces. The leaves do not need to be perfect.
  2. Wash the leaves and dry in a salad spinner. If you do not have a salad spinner, lay them flat to dry on a sheet tray and tap dry with paper towels.
  3. Place kale leaves in a bowl and toss well with olive oil and salt.
  4. Distribute leaves between 2 sheet trays. You do not want the leaves to touch very much so they will get nice and crispy. Bake for 25-30 minutes or until light, slightly browned and very crispy!
  5. Enjoy your homemade kale chips.
