Whether you call it Charcuterie or “meat and cheese board,” this recipe makes an excellent snack for a group of people OR an easy snack to divide over 4 days of meal prepping. Each serving has keto-ratios in mind, keeping carbs low and fat high. Serve it during the holidays or for special events, and nobody will even know you’re keeping your party appetizers keto!

*Please note that you can substitute similar cheeses and meats if you can’t find the ones used in this recipe. Opt for thinly sliced deli meats and soft cheeses to avoid losing track of your macros.

Ingredients

  • 8 small slice – 1 3/4" diameter x 1/8" – each 0.2 ounce dry salami
  • 4 slice prosciutto
  • 1 ounce capicola
  • 2 ½ ounce cheddar cheese, natural
  • 2 ½ ounce gouda cheese
  • 2 ½ ounce havarti cheese
  • 4 midget – 2 1/8" long sweet pickles (gherkins)
  • 4 large stuffed olives

Instructions

  1. Prepare all of the ingredients. Slice the hard salami, roll up the slices of deli meat. Cube the cheeses, and arrange the pickles and olives.
  2. Arrange the ingredients in a fashion of your choosing on a board or plate. For 4 people, each person should get approximately, 2 pieces of salami, 1 piece each of the deli slices, 2 cubes of each cheese (about 1 ¾ oz), 1 pickle, and 1 stuffed olive.
