What Kind of Peanut Butter Can I Use?

We have used crunchy peanut butter for this sweet Keto snack recipe to provide added texture and bite. When selecting a Keto-friendly peanut butter, look for a natural option that is free from added sugars. If preferred, you may use smooth peanut butter in place of crunchy for a smoother texture.

Can I Use a Different Nut Butter?

If you would prefer to not use peanut butter, then you may substitute with an alternative low carb friendly nut butter. Almond butter would make a great substitution. The key is to find a firm nut butter that is strong enough to bind and hold the other ingredients. Avoid using nut butters that are overly soft and runny as the mixture may not be firm enough to shape and roll. Please be sure to adjust your macros to account for any changes made to the original recipe.

Can I Use a Different Sweetener?

We have used a little erythritol to sweeten our Keto-friendly snack recipe. You may swap this for your preferred low carb sweetener, adjusting the quantities according to taste.

Ingredients

  • 4 ½ tablespoon desiccated unsweetened coconut
  • 3 tbsp, ground almonds, raw
  • 3 tablespoon peanut butter, natural, unsalted
  • 1 tablespoon cocoa powder dry unsweetened
  • 1 tablespoon erythritol
  • â…› teaspoon salt, sea salt

Instructions

  1. Add the cocoa powder, ground almonds, 3 tablespoons of desiccated coconut, erythritol and salt to a mixing bowl. Mix well to combine. You may add more or less cocoa powder to taste and adjust the sweetness to preference.
  2. Add the peanut butter to the bowl. Mash everything together until well combined. Add a tablespoon of water and work the mixture together with your hands to form a ball.
  3. Divide the prepared mixture into 12 even-sized portions. Roll each portion into a ball with your hands. Arrange across a clean work surface or plate.
  4. Add the remaining 1.5 tablespoons of desiccated coconut to a small bowl. Take each peanut butter ball one at a time and roll it in the coconut until evenly coated all over. Store in the fridge in an airtight container until ready to eat.
