These delicious cucumber rolls are loaded with low carb veggies, aromatic cilantro, crunchy peanuts and a tangy peanut butter spread.

These make a great snack or sharing appetizer for parties!

Ingredients

  • 2 small – 3" long scallions
  • 1 tablespoon peanut butter, unsalted
  • 1 tablespoon cilantro
  • 1 teaspoon tamari sauce
  • 1 teaspoon lime juice, fresh
  • ½ medium cucumber
  • ½ cup red cabbage
  • ½ tablespoon peanut butter, unsalted

Instructions

  1. Peel the cucumber skin and discard. Peel the cucumber flesh into 15 wide strips.
  2. Add the peanut butter, tamari and lime juice to a small bowl and mix together until well combined. Finely chop the cabbage, scallions, peanuts and cilantro.
  3. Dot each cucumber strip with generous amounts of peanut butter.
  4. Sprinkle the diced cabbage over one half of each cucumber strip and repeat with the remaining ingredients so that each cucumber strip is half loaded with filling. Carefully roll the uncovered half tightly around the filling creating a tube around the ingredients. Serve.
