These deliciously spiced mini pork burgers are topped with a refreshing lime and cilantro mayo and a tangy dill pickle.

These are a perfectly filling snack or treat to rustle up between meals when hunger strikes!

Ingredients

  • 4 medium link – breakfast size sausage, pork, fresh
  • ½ teaspoon red chili flakes by sweet tomatoes
  • ½ teaspoon garlic powder
  • ½ teaspoon coriander leaf, dried
  • 8 inner (small) leaf romaine lettuce
  • 2 tablespoon olive oil
  • 2 small – approx 2" long dill pickles
  • 1 tablespoon mayonnaise
  • ½ tablespoon, chopped cilantro
  • 1 wedge – 1/8 of 2" diameter lime
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Squeeze the sausage meat out of the sausage casing into a mixing bowl. Add the chili flakes, coriander, garlic powder, salt and pepper.
  2. Using your hands, combine the ingredients together in the bowl and divide evenly into four portions. Form a small patty from each portion with your hands.
  3. Heat the olive oil in a large pan over a medium/high heat, add the patties and fry until golden brown all over and completely cooked through. About 8/9 minutes.
  4. Whilst the patties are cooking add the mayonnaise, cilantro and juice and zest of the lime wedge to a small mixing bowl. Stir well to combine.
  5. Arrange each patty on top of a lettuce leaf.
  6. Top each patty with mayonnaise. Slice the dill pickles in half lengthways and sit on top of the mayonnaise.
  7. Top each burger with a lettuce leaf and pierce with a cocktail stick to serve.
