These crusted avocado slices are coated with crumbled pork rinds and Parmesan cheese then baked until crisp and golden.
These make a deliciously fat rich snack, perfect for dipping in your favorite low carb tomato salsa.
Ingredients
- 2 ¾ ounce fried pork rinds
- 1 each avocado
- 1 tablespoon, grated parmesan cheese
- 1 teaspoon italian seasoning
- 1 small raw egg
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Add the pork rinds to a food processor and blend to a crumb consistency.
- Add the parmesan and Italian seasoning and blend again to combine. The mixture will be crumbly and quite fatty.
- Slice the avocado into 8 even slices.
- Beat the egg in a small bowl and add the pork crumb to another bowl.
- Dredge each slice of avocado in the egg until well coated then roll in the crumb, pressing the mixture around the avocado so that it is well coated. Arrange on a shallow oven tray and bake for 10 minutes until crisp and golden.
