Granola can become highly addictive to toss into your mouth for a snack. Unfortunately, just about any granola you buy in stores is loaded with sugar. Anybody on the keto diet likely has to make their own, but this granola is very simple to make in an afternoon! Eat it alone as a snack or top off your yogurt or other snacks with the crunchy goodness.

Ingredients

  • 1 cup, chopped almonds, dry roasted, unsalted
  • ¼ cup unsweetened coconut flake by kroger
  • ¼ cup, whole pieces sunflower seeds, dry roasted, unsalted
  • ¼ cup coconut oil
  • 2 packet stevia in the raw, packets
  • ¼ teaspoon vanilla extract imitation alcohol
  • 2 teaspoon spices pumpkin pie spice
  • ½ teaspoon cinnamon

Instructions

  1. Preheat an oven to 300 degrees. Chop the almonds into rough pieces and combine them with the coconut flakes and sunflower seeds.
  2. Heat the coconut oil in a microwave for 15 seconds. Stir the stevia and vanilla into the coconut oil. Fold this mixture into the granola mix so all the ingredients are coated.
  3. Spread the granola over a tray lined with parchment paper. Bake the granola for 25 minutes, stirring them slightly halfway through to avoid burning.
  4. Once baked, allow the granola to cool. Transfer the granola to a serving bowl, and coat the granola with the pumpkin pie spice and the cinnamon.
  5. Enjoy!
