These tasty morsels make for an excellent savory snack. Sharp dill pickles are paired with salty salami and cream cheese to make these quick and easy to prepare bites.

One roll is perfect for snacking, or two rolls can form the base of a lunch alongside a simple salad.

Ingredients

  • 6 slice – 4" diameter x 1/8" – each 0.8 ounce salami, cotto (cooked or soft), beef and pork
  • 6 small – approx 2" long dill pickles
  • 2 tablespoon cream cheese spread
  • 2 teaspoon lemon juice
  • 1 tablespoon dill weed, fresh
  • ¼ medium cucumber
  • ⅛ teaspoon black pepper

Instructions

  1. Finely chop the dill and add to a mixing bowl along with the cream cheese, lemon juice, salt and pepper. Stir well to combine.
  2. Arrange the 6 salami pieces and peel 6 wide strips from the cucumber. Layer the cucumber down the center of each salami slice.
  3. Dividing evenly between the 6, spoon the cream cheese along the center of each cucumber slice.
  4. Place one small dill pickle in the center of each.
  5. Fold the edges of the salami up around the filling so that it overlaps and seals to form a tight roll. Refrigerate until ready to serve.
