These tasty cucumber rolls are loaded with flaky canned salmon, salty capers, aromatic fresh dill and cream cheese.

These make great snacks or lunchbox fillers!

Ingredients

  • 3 ½ ounce canned salmon
  • 1 ½ tablespoon cream cheese spread
  • 1 ½ teaspoon capers
  • 1 medium cucumber
  • 1 teaspoon, whole pieces dill weed, fresh
  • 1 teaspoon lemon juice
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper, ground

Instructions

  1. Peel the skin from the cucumber and discard. Peel the cucumber flesh into 16 wide strips.
  2. Roughly chop the dill and capers and add to a mixing bowl. Flake in the salmon and add the lemon juice, cream cheese, salt and pepper. Mix together well to combine.
  3. Divide the filling evenly between the cucumber strips, spreading an even layer across the cucumber leaving about 1 inch clear at one end.
  4. Roll each strip up starting from the filled ends so that you have 16 tight rolls. Refrigerate until ready to serve.
