These Keto cookies are packed with Easter flavors and make a delicious low carb treat in place of traditional candies. Our Keto cookies are prepared with smooth almond butter, low carb sweetener, unsweetened cocoa powder, orange zest, dried cranberries, crunchy flaked almonds, egg, a little almond extract and warming spices. These cookies are inspired by Simnel cake and give a hint of the flavors, minus the carbs.

What is Simnel Cake?

Simnel cake is a traditional Easter fruit cake seasoned with spices. The cake is sandwiched with layers of almond paste and decorated with balls of marzipan on top. Our Keto cookies are flavored with both a little dried fruit, cinnamon, ginger, almond and orange zest to replicate the flavors of Simnel – in a snack-sized portion!

What Kind of Almond Butter Should I Use?

We have used a plain, smooth almond butter which is simply a blend of almonds and sea salt. The almond butter is thick yet slightly runny in consistency. This is important for being able to mix the cookies and get the right consistency. If the nut butter is too dry, the cookies will not mix as easily, and the mixture will be too dry.

Ingredients

  • 2 tablespoon cocoa powder
  • 1 1 teaspoon orange zest
  • 1 tablespoon reduced sugar craisin dried cranberries
  • 1 tbsp, sliced almonds, raw
  • 1 large raw egg
  • 1 cup almond butter, unsalted
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger, ground
  • ½ teaspoon baking soda
  • ½ teaspoon almond extract
  • ⅓ cup erythritol
  • ⅛ teaspoon salt, sea salt

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line a large shallow oven tray with baking paper. Add the almond butter, erythritol, cocoa powder, orange zest, cinnamon, ginger, almond extract, baking soda and salt to a large mixing bowl.
  2. Crack the egg into the bowl with the other ingredients. Beat everything together until well combined. You should have a smooth cookie dough consistency.
  3. Add the flaked almonds to the bowl. Roughly chop the cranberries and add to the bowl. Stir well, mixing them evenly throughout the cookie dough.
  4. Divide the mixture into 10 even-sized balls and arrange across the lined oven tray. Press the cookie dough balls down gently with the palm of your hand, forming thick and even cookie shapes. The cookies will spread when baking, so ensure there is a 2 inch space between each cookie.
  5. Transfer the tray to the oven and bake the cookies for 10-12 minutes, or until just firm to touch and golden brown. Leave the cookies to cool completely and firm up before serving. Store in an airtight container.
