Forget the carb-loaded breading and just eat the best part of a cheese stick – the melted cheese! Dip these cheese rollups in a quickly-made scratch guacamole. You can amp up your guac with extra keto ingredients like sour cream, cilantro, diced chiles, etc.

Ingredients

  • 4 slice (from pre-sliced package) – each 3/4 ounce provolone cheese
  • â…› teaspoon cumin, ground
  • â…› teaspoon paprika
  • â…› teaspoon cayenne
  • 3 ounce avocado
  • 1 teaspoon olive oil
  • 1 teaspoon lime juice, fresh
  • â…› teaspoon salt

Instructions

  1. Preheat an oven to 400 degrees. On a sheet tray lined with parchment paper, arrange slices of provolone. Sprinkle the cumin, paprika, and cayenne across the cheese slices.
  2. Bake the tray for just 5 minutes – long enough for the cheese to melt, bubble, and turn golden around the edges. Let the tray cool for just 60-120 seconds before using a spatula to roll the cheese up into rollups.
  3. While the cheese finishes cooling, make the guac. Use a fork to mash the remaining ingredients together into a smooth guacamole. At your discretion, you can add other keto ingredients to your guac that you would enjoy.
