These simple yet tasty chips combine roasted sprouts with tangy parmesan and salty bacon to create a deliciously crunchy snack.

Perfect for snacking over the holiday season or to prepare when entertaining guests.

Ingredients

  • 6 slice – 6" long bacon
  • 2 cup, cut pieces brussels sprouts, raw
  • 2 tablespoon olive oil
  • 1 tablespoon, grated parmesan cheese
  • ½ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.
  2. Trim and thinly slice the sprouts and add to a mixing bowl.
  3. Add the Parmesan, salt, pepper and 1 tablespoon of olive oil and toss to combine, coating the sprouts in the seasonings.
  4. Transfer to the oven for 15-18 minutes to bake, turning halfway through, until golden and crisp.
  5. Whilst the sprouts are baking, add the bacon to a pan with the remaining olive oil and fry until completely crispy – so it looks over cooked.
  6. Add the bacon to a food processor and blitz to form a crumb.
  7. Remove the sprouts from the oven and sprinkle over the bacon crumb, toss well to combine and serve immediately.
