These pork bites are full of delicious soy and ginger flavors. They are cooked to tender perfection in an Instant Pot and then seared until golden brown and delicious. Serve over cauliflower rice or eat them on their own. I used fatty pork chops for this recipe from a local farm, but you can sub in pork belly instead.

Ingredients

  • 2 lb pork fresh belly raw
  • 1 ounce ginger
  • 4 clove garlic
  • 3 large scallions
  • 3 tablespoon rice vinegar
  • ½ cup tamari sauce
  • 1 tablespoon sesame seed oil anoriental seasoning by dynasty
  • 2 cup water
  • ½ tablespoon avocado oil

Instructions

  1. Place all ingredients in the bottom of an Instant Pot. Set for high pressure for 30 minutes. Do a quick release of the steam.
  2. Cut the cooked meat into bit sized pieces.
  3. Place a cast iron skillet over medium-high heat. Add oil and swirl the pan. Cook the bites on all sides until browned nicely.
